How to make kurbani meetha
PROCESS-1
Apricots 250 grm
Milk 1/2 litre
Sugar 125 grm
Edible food color - red (optional)
Clarified butter 1 tbsp
Directions
Soak apricots in just enough warm water for 6-7 hours or overnight.
Using a knife separate fruit and nut. Keep the nuts aside. Using the same water blend
the fruit pulp into a coarse paste. Pour this paste in a thick bottomed pan, add milk and
cook on a medium flame till it thickens. Keep stirring the mix. Add sugar and reduce the flame,
and keep stirring. Cook for 10 more minutes till it thickens and switch off the flame. Add color if using.
Crackle the nuts and carefully remove all the seeds. Soak them in hot water for a while and peel the skin.
Split them and add these to the sweet. Finally add clarified butter and stir well.
Serve scoops of it with fresh cream / vanilla ice-cream / plain custard.

Items needed
Apricots-300gms
Sugar-200 gms
Water-300 ml
lemon syrup-1 tsp
Almonds/Cashews for garnishing
Pressure cooker
Deep bottom bowl
Spatula
Measuring jar
METHOD 1
*Soak the apricots overnight till it becomes soft
*In a deep bottom bowl,boil water and add sugar till sugar is dissolved.
*Add a few drops of lemon syrup to prevent caramelisation.
*De-seed the apricots and cook it in the sugar solution till it becomes soft and mashed.
*Your Khubani ka meetha is ready.
*Garnish with Almonds/Cashews or serve with ice cream
METHOD 2
For those who do not like to soak Apricots overnight,here is a faster method
*Pressure cook the apricots for 4-5 whistles till it becomes soft and De-seed the apricots
*Mix the apricots with water and sugar and stir till all the sugar is dissolved and the solution develops a paste like consistency
*Add a few drops of lemon to prevent caramelisation.
*Your khubani ka meetha is ready
*Garnish with Almonds/Cashews or serve with ice cream
